Nothing epitomises 1980's cuisine more than the Chicken Kiev. My version, with delicious garlic and parsley butter and fresh light breadcrumbs, makes for a fantastic meal.

The zingy mango salsa is the star of this recipe as the combination of sweet mango and the sharp flavours of red onion and chilli work so well together. It's easy to make, very low fat and full of flavour - what more could you want from a healthy recipe?!

Chicken is our nation's favourite for a roast dinner and this is my take on it. I love the sharpness of the lemon against the sweet honey flavour that runs through this dish. Crispy skin is a must and you won't be disappointed here

An American classic, hot wings are the perfect, if a little sticky, finger food and require no lengthy marinade. Delicious for a barbecue, picnic or served indoors with a nice salad.

This is a great salad bursting with flavour. The mustardy marinade packs a punch and is offset by the sweetness of the apples. A sure fire winner for anyone who's counting the calories.

Who doesn't love a pie? A buttery crisp puff pastry top that, when removed, reveals a heavenly thick filling. This is my tasty take on the classic Chicken Pie.

This is a really simple super quick dish that's great for after work when your time is at a premium! The subtle flavour of rosemary running through the chicken with the creamy cabbage and bacon is a definite winner.

This is a perfect example of how healthy low-fat food doesn't need to be bland and boring. What could be better than a guilt-free version of the takeaway favourite - sweet and sour chicken? My version contains virtually no fat and has the taste to rival any takeaway.

This is a great recipe - homely, really tasty and perfect for a Sunday afternoon. The effort is really minimal - just chopping a few vegetables and throwing everything in a pot. Using chicken thighs rather than breast means that the meat will still be nice and juicy
