If anyone says that salads are boring then cook them this dish. It's packed full of fresh flavours, textures and the warming heat of chilli - you'd never believe it could be good for you!

The sweetness of the roasted butternut squash with the earthy mushrooms and lentils works so well. Throw in a good whack of fragrant basil at the end and top with a drizzle of truffle oil for the ultimate in richness.

Chicken Caesar Salad is one the most easily recognisable salads available. My take on the classic uses natural low fat yoghurt which really cuts down the calories but doesn't take any of the flavour away.

This is a really tasty healthy dish with the mix of veg creating really nice contrasting texture and flavours. Add in the the syrupy sweetness from the reduced balsamic vinegar and it's just fantastic.

Barbecues are often meat-heavy feasts so here's a great recipe for vegetarians or if you just fancy something a bit different. Sweet and juicy charred peppers are stuffed with delicious mushroomy couscous and sun dried tomatoes.

The reason that I love this dish is because it's a little bit different and contains cannellini beans which are super healthy. There are loads of different textures and flavours going on, but no one flavour overpowers the dish.

This is a great salad bursting with flavour. The mustardy marinade packs a punch and is offset by the sweetness of the apples. A sure fire winner for anyone who's counting the calories.
