The sweetness of the roasted butternut squash with the earthy mushrooms and lentils works so well. Throw in a good whack of fragrant basil at the end and top with a drizzle of truffle oil for the ultimate in richness.

Barbecues are often meat-heavy feasts so here's a great recipe for vegetarians or if you just fancy something a bit different. Sweet and juicy charred peppers are stuffed with delicious mushroomy couscous and sun dried tomatoes.

This is great as a simple starter or a light lunch. It's so quick to throw together and the creaminess of the cheese combined with the crunch of the breadcrumbs is a true delight.

This is a great vegetarian dish that's easy to do, tastes great and looks really fantastic. In that lovely puff pastry parcel is a large portabello mushroom stuffed with a mix of chopped mushrooms, ricotta and fresh thyme.

This is a great example of a dish that doesn't have many ingredients and lots of cooking processes yet it literally bursts with flavour. The bruschetta can be served as individual dishes or are great on a platter in the middle of the table.

Lasagne is such a popular dish, made evident by how many restaurants serve it! I prefer vegetarian lasagne as the meat is never the star of the show anyway. The best bit is surely the delicious sauce?! Made properly, lasagne should have three sauces - fresh tomato, rich white and creamy cheese.

This looks like a dish you'd be served in a fancy restaurant but is really nice and easy to do. This recipe combines melt in the mouth goats cheese and poppy seeds with the lovely warm flavour of rosemary, all complemented by a rich and fluffy mushroom foam.

The three main crowd pleasing ingredients of goats cheese, caramelised red onion and sweet buttery puff pastry work so well together. I've added in mushrooms and tomato puree to give the tart a little bit more oomph!

Perfect for a picnic, lunch or a light dinner, this quiche is packed with colourful peppers, baby spinach and onion, all inside a crisp pastry shell. Surprisingly easy to make, it's delicious summer food that looks great.

Simple flavour combinations executed well always produce great results, as this pasta salad proves. Pasta bows coated in a mustardy dressing with juicy grilled flat mushrooms and peppers, all mixed together with baby spinach and rocket.
