200g marzipan

40g icing sugar

40g porridge oats

1 dessert spoon of plain flour

1 egg white

 

Chewy marzipan biscuits

preparation 5 mins • you cook for 7 mins •

Makes 12 biscuits

These biscuits are my favourite. Give me these to eat and I will be your loyal friend forever! The combination of marzipan and oats give them a chewy flapjack-like consistency which is utterly delicious. Porridge oats are also supposed to be good for you...?!

Food processor

Biscuit tray or non-stick baking tray

Mixing bowl

Spatula

Tablespoon

Palate knife or flat butter knife

Preheat your oven to 150c. Put the marzipan into your food processor and blend until chopped up. Add in the icing sugar, egg white and a dessert spoon of plain flour. Blend until you have a smoothish mix.

Empty into a mixing bowl and stir in the porridge oats. Add a tablespoon of your mix for each biscuit to your tray. Repeat this until the mix is all gone!

Bake in the oven for 25 minutes until just starting to go golden brown. Remove from the oven and allow to cool completely before gently easing each biscuit off the tray using a palate knife or flat butter knife.
