For a quick, easy and delicious meal look no further than this! A moreish bowl of creamy pasta with the gentle flavour of fresh basil running through it. It looks great and, better still, it only takes 10 minutes to prepare and cook, so is ideal for busy weeknights.

Before you start have all the ingredients out and ready. Have a pan of salted water boiling on the hob. Put your frying pan/wok on the hob on a high heat and click here!

This is a great dish packed with flavour - all you have to do is throw a bunch of ingredients in a pot and let them cook for a couple of hours and the result is magic! Slow cooked lamb shoulder, with the sweetness of apricot and the gentle heat of cayenne pepper - this dish will warm up your senses in no time.

Put a pan of salted boiling water on the hob. Put your frying pan/wok on the hob on a high heat. Add the pasta to the boiling water, stir and cook for 4 minutes. Meanwhile sprinkle the chopped chicken with a good pinch of salt and pepper. Add a teaspoon of oil to your pan and throw in the chicken. Move the pieces around the pan and cook for 3.5 minutes (until the pasta is done).

Whilst the chicken and pasta are cooking, roll the basil leaves into a tight little ball and finely chop.

Once your pasta is done (it should be soft enough to eat but still have a bite to it) drain through a colander. By now your chicken should be nice and crispy so turn the heat off.

Add 3 dessert spoons of mascarpone to the chicken in the pan and stir to mix through.

Put the pan back on a low heat and add in the chopped basil and cooked penne. Add a good pinch of salt and pepper and stir thoroughly.

To serve, simply divide between two pasta bowls or plates. How easy was that?!
